With summer settling in, I am sharing with you my famous beer can chicken BBQ recipe. In this recipe, all the ingredients to satisfy BBQ fans are brought together: beer, chicken and BBQ.
1 chicken (1.5-2 kg)
1 tbsp Olive oil
Montreal-style steak chicken spices
1 can of lager or blond beer at room temperature
I strongly recommend using a chicken sitter specially designed for BBQ cooking to which the beer can is easily inserted.
Preheat one section of the BBQ to high heat and leave the other section without heat.
For three-section BBQs, heat the two side sections and leave the centre section without heat. In this recipe, the chicken has to cook under uneven heat.
Brush the chicken with olive oil to make the spices stick. Insert a heaping tablespoon of spices into the chicken's inner cavity. Remove one third of the beer from the can before placing it on the chicken sitter and inserting the chicken over it.
Place the chicken with the chicken sitter and beer can over high heat on the BBQ for about ten minutes until the beer becomes hot.
Move the chicken to the unheated portion of the BBQ while keeping the first area in operation. Reduce the burner's intensity. Make sure you don't burn the chicken's skin before the meat is cooked. Cook with the BBQ lid closed for 1.5-2 h or until the meat reaches 180 °F. Regularly check the chicken and adjust the temperature as necessary.
This chicken is so tender and tasty that guests will want to borrow the cook to redo this recipe.
